Quinoa Pizza Bites--Made these tonight and they were a HIT!!! New family favorite. So tasty, so healthy, and the deeelicious smell made its way all the way out to the garage. Only changes I made were: 2 Tbl spns dry basil (had no fresh); turkey pepperoni; 3 eggs (not 2); and just a smidgen more cheese. Can substitute any favorite toppings for sure. Totally recommend--as do the boys :)
