Coconut Crumbed Bananas Not so much a recipe but more of a guidance. You’ll need: About 3 large ripe but firm bananas. The size of your fruit is, of course, your choice ;) Plain flour 1 large egg, beaten with about a tablespoon of coconut milk 1/2 cup of breadcrumbs (Japanese Panko is best) 1/2 dried shredded coconut Coconut Oil

Fried Bananas Coconut Crumbed Bananas Not so much a recipe but a guidance. You’ll need: About 3 large ripe but firm bananas. The size of your fruit is, of course, your choice ;) Plain flour 1 large egg beaten with about a tablespoon of coconut milk 1/2 cup of breadcrumbs (Japanese Panko is best) 1/2 dried shredded coconut Canola or Sunflower oil Method Mix the breadcrumbs and coconut until combined in a dish and set aside. Peel and cut the bananas in half and set aside. Place oil in the pot about 1.5 – 2 inches thick and heat up to 180°C. Oil is ready when a cube of bread turns golden brown in about 15-30 seconds. Another way to test is to stick the handle of a wooden spoon or wooden chopsticks in. If it starts to bubble around the spoon immediately then it’s ready. Simple rule for deep-frying – if the oil is too hot, the outside will burn and cook too fast without the insides heating up adequately. Too cold and food will be greasy and heavy. Coat the banana halves with the flour, patting off the excess. Then dip it in the egg mixture before dropping it on the crumbs to coat. If you wish to double coat it for extra crunch, dip it back into the egg wash and crumb it again. Drop it gently into the hot oil and deep fry, turning it once until it’s golden all over. Remove with a slotted spoon and drain on paper towels. Continue with the remaining bananas.

Spinach Balls Source: A friend 2 (10 oz.) packages frozen spinach, thawed & well-drained 2 small onions, very finely chopped (I use a food processor) 2 1/4 c. stuffing with herbs (I use Pepperidge Farm) 6 eggs, beaten 1/2 c. melted butter 1/2 c. Parmesan cheese 2 tsp. garlic salt 1 tsp. black pepper Mix all ingredients until well combined. Form into about 1" balls; place on a baking sheet sprayed with cooking spray. Bake at 350 for 20 minutes. Makes approximately 60 balls. Spinach balls may be frozen, either baked or unbaked. (I always freeze mine pre-baked.) For pre-baked balls: Remove from freezer about 30 minutes prior to reheating. Reheat in a 350 degree oven for about 10 minutes. For unbaked balls: Remove from freezer 30 minutes before cooking. Bake as directed (350 for 20 minutes).

Vegan Quinoa Sweet Potato Chili -- similar to the other quinoa chili. Both also desperately needed lime at the end when eating on the first day. Best on the 3rd. day.
Vegan quinoa & sweet potato chilli. Pinned and tried! I made this as a late night healthy 'snack' and loved it. I didn't have black beans so I used one tin of kidney beans and one tin of black eyed beans. I also added a green bell pepper for some more texture. I had to cook for the whole 30 mins to get the mix to thicken up, the end result was delicious, especially topped with a little Parmesan (though obviously this turns the dish into non vegan). The chilli powder I used was hot therefore the dish really packed a punch.
