our redcurrant plants are not exactly what you'd consider as being 'thriving', but given no other berry plant has ever made it in this corner of the woods we live in, the fact that they do bear fruits every summer is a blessing, even though there are not enough for you to actually make anything. i made these simple and delightful redcurrant tarts using the fruit i picked up at the local green market.
