The pecan pies of today bear little resemblance to their 19th-century inspiration. we recreated Old-Fashioned PecanPie without using processed corn syrup. Many traditional syrups (cane, sorghum) worked but hard to find. In the end, combining maple syrup with brown sugar and molasses replicated the old-fashioned versions perfectly.startthe pie at a high oven temp then drop the temp to ensure the bottom crust was crisp and brown.
