raspberry plantain bread 3 oz raspberries 2/3 c 1/2 large plantain (yellow with a few black spots) 2 ener-g eggs handful fresh basil (optional) 1 tbs applesauce 1/4 tsp cinnamon Place all ingredients into a blender and blend till smooth. Pour batter into a oiled baking dish. We used a rectangle shape (4 by 6) but any shape will do. Bake 350 f 30 minutes. Baking times will vary depending on pan used.
