Creamy, delicious Scottish Rice Pudding
"He's such a wimp, he canny knock a skin fae a Rice Pudding" Mmmmm Rice Pudding Homemade Scottish Rice Pudding Creamy and delicious. I love this warm desert In Scotland there are two different types of Rice Pudding The first is 'store bought' Rice Pudding in a Tin, a favourite brand is Ambrosia Rice Pudding, I love this stuff too We can actually buy this at our local supermarket in the British Food isle here in Texas from time to time Another type of Rice Pudding is homemade Rice Pudding Homemade tends to be more thick and substantial where Rice Pudding in a can is more runny, both are entirely different and both are delicious in there own right So here we are making Homemade Rice Pudding Cooking time for this desert is 1.5 hours, but its worth waiting on Makes 4 servings You will need 600ml/1pint Whole Milk (Here is USA I used half and half to make it more creamy) 40g/1.5 oz Short grain or medium grain rice Few drops of Vanilla essence 40g/1.5 oz Fine Sugar Knob of butter Ingredients Bring milk or milk and cream combo to boil in a saucepan Boil Milk Lower heat and add rice, sugar and vanilla and simmer for a few minutes Transfer mixture to an open top oven proof dish, top with butter Mixture in Oven proof Dish Bake in oven until golden on top for 1.5 hours at 375F/160C mmmm, Do you see that Skin? Yummy. Spoon out into 4 individual bowls Serve hot, adding Cream or Half and half, to taste Scottish Rice Pudding Homemade Scottish Rice Pudding Enjoy A tip if you don't have too much time to stand at the stove is to mix all ingredients together in the oven proof dish and put straight into oven, adding an extra 15 minutes to baking time Other variations for serving are enjoy cold. Or to make more creamy add quarter pint of cream Or add cinnamon and raisins to make more spicy Another favourite way is to top with a spoonful of warmed jam We are having Rice Pudding for afters tonight, How about you? Good Morning, Happy Sunday everyone Now its time for a typical Sunday breakfast item in Texas or indeed USA Pancakes In Scotland they also go by the name of Drop Scones or Scotch Pancakes Scottish Pancakes The recipe I am using today is for the most fluffy, sweet Scotch Pancakes I have ever had the pleasure of eating I always make Pancakes this way since getting my hands on this recipe, I love this recipe Its not a typical Scottish Cookbook recipe but one that a great friend of mine gave me years ago These delicious Pancakes are made from Karen's recipe I used to work with Karen back in the day, in where else? Woodrow's Karen and I at Woodrow's, we made this Christmas Buffet for all the staff Honestly, we used to sit around at going home time talking about what to make for dinner and swapping some of the most delicious recipes ever, I still use many of these "swapped at Woodrow's" recipes and this one is no exception Thank you Karen for this great recipe, still scribbled on a piece of scrap paper from Woodrow's You will need 3 Eggs 7floz/200ml Milk 7oz/200g Sugar 1lb/450g Flour (I use self raising, makes them really fluffy inside) 4floz/100g Oil (any cooking oil is fine even Olive Oil) Scotch Pancakes Mix all the ingredients well, together in a large bowl (I use a hand mixer) Pour large spoonfuls onto warm skillet or frying pan Leave enough room between each for spreading I usually wait until I see small bubbles appear under the surface before flipping over to do the second side Once done, Place hot Pancakes on a wire rack to cool slightly Enjoy The Scottish way is to serve them warm with butter or butter and jam Another favourite serving suggestion in our house is top with sliced bananas, pour over pancake syrup and top with whipped cream That's what we are having for breakfast this morning Scotch Pancakes Whatever you are having, Enjoy your Sunday breakfast Angela

Stovies Stovies have been around for Centuries in Scotland, its one of those meals that goes far and feeds many with very little cost and for that reason it is still around today, its simple to make and is fulfilling and delicious as it ever was years ago It is manly enjoyed nowadays by Scots on New Years Eve or Hogmanay (as us Scots call it) and is now considered a piece of nostalgia in the Scottish food world Many Scots will also dig into Stovies on Burns night (January 25th) Making this authentic dish is completely up to the chef, but you will need plenty of potatoes and a little meat of your choice (lamb, beef, pork, sausage, or even Corned beef), I used beef and a little gravy this time. Also needed is a little bit of vegetable, I prefer to just use an onion To make Stovies for your New Years Eve You will need Plenty of potatoes 1 large onion a little meat and gravy (preferably the authentic British Bisto aahhh!!) Bisto Cut and dice onion and place in a pot with the butter, heat through until butter has melted and the onions are soft and transparent Onion onion Peel and cut potatoes into 1 inch cubes Potatoes In a larger pot, boil potatoes in a large pot in water until potatoes are soft but not mushy (we are not making mash) Potatoes warm up the meat and gravy Beef and Bisto drain the potatoes and add the onions and meat and gravy, mix well but be careful to leave lumps of potato you don't want this to be like mash Add a generous helping of salt and ground pepper to taste Enjoy, enjoy, enjoy. Stovies This dish will warm you and your guests right down to your feet, it is comfort food at its best.
