Chez Panisse Eggplant, Caramelized Onion and Tomato Pasta. Made this with Elizabeth for dinner. We made it without the ricotta, and topped with fresh parmesan instead. The eggplant was overcooked, but I love the carmelized onions.

This vegetable bolognese has all the goodness of pasta with a chunky, "meaty" marinara sauce, but is made entirely of vegetables and nuts! (I'd have to serve it over regular pasta instead of the zucchini noodles.
