Mini Tomato and Mozzarella Tarts

Mini Tomato and Mozzarella Tarts - puff pastry dough - olive oil - large yellow onion - 2 garlic cloves - kosher salt - pepper - chicken broth - fresh thyme - grated parmesan cheese - fresh mozzarella cheese - 2 roma tomatoes - fresh basil leaves

I have made these & they are awesome! CRANBERRY FETA PINWHEELS   1 carton (8oz) whipped cream cheese, softened 1 c (8oz) crumbled feta cheese 1/4 c chopped green onions 1 pkg (6oz) dried cranberries 4 flour tortilla (10in)   In a small bowl, combine the cream cheese, feta cheese and onions. Stir in cranberries. Spread about 1/2 c mixture over each tortilla & roll lightly. Wrap with plastic wrap and refrigerate for at least 1 hour. Cut each roll-up into 10 slices.
