    Roasted Duck--before using this recipe I prepped the duck by piercing the skin all over with a fondue fork then set it on a rack in the sink and poured two large pots of boiling water over it, I then patted it dry and placed on a plate in the fridge for an hour-then I followed the recipe. This method is supposed to help obtain a crisp skin on the duck.
