Weekend Biscuit Egg Casserole ~ I have made this breakfast casserole a few times for company, and it's been a hit every time.. It takes little effort and can even be prepared (baked) and frozen days ahead of time

Breakfast cupcakes. Makes 12. Mix: 20 oz shredded potatoes, 2 eggs, 4 Tbsp flour, 1 chopped onion, 1 C chopped ham, 1 c shredded mozzarella, 1/2 c grated parmesan, salt pepper to taste. Bake 25-30 min @ 400F. Top with scrambled eggs.

Bacon - The trick is to put the pan in a cold oven and then switch it on and begin your timer. Im amazed how many people dont know this. Cook bacon in the oven. Cover cookie sheet with tinfoil first. We do 375 for about 20 min instead of 400 for ten because the lower and slower the more fat renders out.
