    1 can yellow or white corn, drained (fresh is even better), 1 can black beans, drained and rinsed, 1 can RoTel diced tomatoes and green chilis, 1 bunch cilantro, finely chopped, 1/2 small red onion, finely chopped, 2-3 green onions, finely sliced, 1 red bell pepper, finely chopped, 2-3 Tbsp lime juice, 1 avocado, chopped (can be left out if desired), 1/2 tsp minced garlic, small amount of jalapeno, depending on how hot you like it, dash of cumin. Gently mix all together in a large bowl and serve (or, put it in the fridge for a couple of hours). Eat with tortilla chips with dinner, put it on top of scrambled eggs and wrapped it in a tortilla for a breakfast burrito! Use as a topping for tacos or you can just eat it right out of the bowl with a spoon!

    Easy but lots of time to individually do 3 step process, fry, turn each over. It was pretty good. It was no longer a veggie with frying.
