Veggie Gyro: Here's a quick and easy vegetarian version of the popular Greek sandwich. Slices of lettuce, onion, tomato and cheese are flavored with the traditional flavors of cucumber, garlic, and dill.

Skinny Veggie Lasagna..I just made this and it is so good! Added Parmesan Cheese which added about 70 more calories than the original recipe. A HUGE slice is still well under 300 calories and full of veggies and flavor!
