I've tried a few others found online & have created my own in the past - however, this combines all of those good elements into one. Creamy Shrimp Enchiladas - The Girl Who Ate Everything. ****Made these last night 7/23/13. Sooo Soo good! I cut the salt by half. Next time will probably cut it completely and I will use corn tortillas rather than flour. It was a big hit!! Filling could also be used on pasta, or just with some chips!
