    Flower Power Eggs...too cute...There’s no recipe, really, just three steps: 1) Cut bell peppers into 1/2 inch rings; 2) Place in a non-stick lightly oiled skillet; and 3) Crack an egg in the middle of each ring and cover and cook over low heat until done. If you like your yolks runny, just cook over low heat until whites are done. If you like your yolks firm, break the yolks and then cook over low heat until both whites and yolks are firm.

Baked Mozzarella Sticks. These were pretty good, like the recipe says you have to eat them right out of the oven (when they cool off a little) otherwise they aren't good. The breading was really yummy and they were great dipped in marinara sauce. They weren't as good as restaurant style ones, not as soft and creamy but still good for making them at home. And easy too!

Crushed Hot Potatoes. My friend from Hungary makes these, and they are SO good, bake or boil potatoes before crushing them.

Bell pepper egg-in-a-hole. For when I can eat eggs again.
