Avocado and Romaine Salad. Dressing: Spring onion (finely diced), garlic glove & anchovy fillet (mashed), 4T red/white wine vinegar. Let sit for 10 min. Add 2t dijon mustard. Paste everything. Add 8T olive oil slowly whilst whisking. (2 parts olive oil to 1 part vinegar) (Can use lemon juice instead of vinegar).

Heat 8in skillet. Pour batter in skillet; Coving bottom of pan THINLY by SWIRLING pan around. COOK until edges easily lift w/ spatula. FLIP; COOK for 5-10 seconds. Should slide right out. Use wax paper between crepes. Filling: 1 c sour cream, 1 8oz SOFT cream cheese, 1 c powdered sugar
