    BREAKFAST CUPCAKES: 1 20-ounce pkg hash browns, 2 beaten eggs, 4 Tbs flour, ¼ c grated onion, 1 c diced ham, 1 c shredded mozzarella cheese, ½ c grated Parmesan cheese. Cook 12 scrambled eggs. Oven 400°, nonstick spray muffin tin. Mix first 8 ingredients together. Spoon potato mixture into muffin cups 1/3 full, press in middle & up sides each cup. Bake til golden brown, 25 mts. If nests puff too much in center, scoop out with spoon. Spoon cooked eggs into nests; top with cheese (melt); garnish.
