Combine into food processor and blend thoroughly (makes enough for 3 chickens).

    [Pasta] ---- Mushroom & Spinach Lasagna:: 3/4 lb. lasagna noodles, 3 Tbs Extra Virgin Olive Oil, 1/2 chopped large yellow onion, 2 cloves minced garlic, salt & pepper, 1/2 lb sliced mushrooms, 3 Tbs flour, 2 2/3 c vegetable or meat stock, 3/4 c milk, 3 c spinach, 3 1/2 c shredded parmesan cheese, (optional) 2 c cubed cooked chicken or turkey. ---- Makes one 9 x 13 lasagna.

    [Quinoa] ---- Quinoa Fried Rice:: 1 c quinoa (or 2½ -3 c leftover cooked quinoa), 1 ½ c water or low-sodium chicken stock, ¼ chopped small onion, 2 chopped carrots, 3 chopped scallions, minced 3 garlic cloves, ½ tsp fresh minced ginger, 1 Tbs olive oil, 2 eggs lightly scrambled (still raw), ½ c peas. ---- Sauce:: 1 ½ Tbs teriyaki sauce, 2 ½ Tbs soy sauce, ¾ tsp sesame oil.

    Red Lentils & Spinach in Masala Sauce:: 1 Tbs coconut oil, 1 small red diced onion, 2 minced cloves garlic, ⅓ c masala paste, 1 c stewed tomatoes, 1 c coconut milk, ½ c red lentils, 2 handfuls spinach. ---- Masala Paste:: 1½ tsp cumin seeds, 1½ tsp coriander seeds, 2″ piece ginger peeled & cut, 1 Tbs red pepper flakes*, 1 Tbs smoked paprika, 2 tsp garam marsala, 1 tsp salt, 2 Tbs nut oil, 2 Tbs tomato paste, ⅓ c packed cilantro leaves.

    [Avocado] ---- BLT Stuffed Avocado:: 2 large avocados, 1 teaspoon lemon juice, 1 ½ c small cubed rustic bread, 1 medium cored & diced tomato, 1/3 c thinly sliced spinach leaves, ¼ c chopped cooked bacon, 2 Tbs mayonnaise, 1 tsp salt, ½ tsp black pepper.

    Sweet Potato Hummus:: 2 cups chickpeas zest of 1 organic lemon, juice of ½ lemon 3 small sweet potatoes 1 tsp. ground cumin pinch of cayenne pepper (optional) 2-3 pinches sea salt 3 Tbsp. olive oil 2 cloves garlic

    Wild Rice Pancakes:: 1 cup Wild Rice 3 cups All-purpose OR (if You Have It) Cake Flour 1/2 teaspoon Salt 2 Tablespoons Baking Powder 4 Tablespoons Sugar 3-1/2 cups Whole Milk 2 whole Eggs 1 Tablespoon Vanilla 2 Tablespoons Butter, Melted Butter, For Serving Maple Or Pancake Syrup

    [Chicken] ---- Chicken Piccata:: 2 chicken breasts butterflied and pounded thin, 1 Tbs olive oil, 1 Tbs butter, 1 chopped clove garlic, 1/4 c dry white wine, 1/2 c chicken broth, 1 lemon juice, 1 tsp honey, 2 Tbs capers, 1 Tbs butter, salt & pepper, 1 Tbs chopped parsley. ---- 2 Servings
