BBQ Rub: 1/4 cup paprika -- 2 tablespoons garlic powder -- 2 tablespoons minced, dried onion -- 2 teaspoons peppercorns -- 1 teaspoon chili powder -- 2 tablespoons ground cumin -- 3 tablespoons ground coriander -- 1/4 cup kosher salt -- 1/4 cup light brown sugar. Combine into food processor and blend thoroughly (makes enough for 3 chickens).

Red Lentils & Spinach in Masala Sauce:: 1 Tbs coconut oil, 1 small red diced onion, 2 minced cloves garlic, ⅓ c masala paste, 1 c stewed tomatoes, 1 c coconut milk, ½ c red lentils, 2 handfuls spinach. ---- Masala Paste:: 1½ tsp cumin seeds, 1½ tsp coriander seeds, 2″ piece ginger peeled & cut, 1 Tbs red pepper flakes*, 1 Tbs smoked paprika, 2 tsp garam marsala, 1 tsp salt, 2 Tbs nut oil, 2 Tbs tomato paste, ⅓ c packed cilantro leaves.

[Avocado] ---- BLT Stuffed Avocado:: 2 large avocados, 1 teaspoon lemon juice, 1 ½ c small cubed rustic bread, 1 medium cored & diced tomato, 1/3 c thinly sliced spinach leaves, ¼ c chopped cooked bacon, 2 Tbs mayonnaise, 1 tsp salt, ½ tsp black pepper.

Sweet Potato Hummus:: 2 cups chickpeas zest of 1 organic lemon, juice of ½ lemon 3 small sweet potatoes 1 tsp. ground cumin pinch of cayenne pepper (optional) 2-3 pinches sea salt 3 Tbsp. olive oil 2 cloves garlic

Wild Rice Pancakes:: 1 cup Wild Rice 3 cups All-purpose OR (if You Have It) Cake Flour 1/2 teaspoon Salt 2 Tablespoons Baking Powder 4 Tablespoons Sugar 3-1/2 cups Whole Milk 2 whole Eggs 1 Tablespoon Vanilla 2 Tablespoons Butter, Melted Butter, For Serving Maple Or Pancake Syrup

Braised Lamb Shanks:: 4 lamb shanks Kosher salt and freshly ground black pepper, to taste 3 tbsp. chili powder 2 tsp. ground coriander seed 2 tsp. ground cumin 1/4 tsp. ground cinnamon 4 tbsp. extra virgin olive oil 4 carrots, roughly chopped 4 ribs celery, roughly chopped 4 jalapeños, stemmed, seeded, and roughly chopped 2 medium onions, roughly chopped 10 cloves garlic, smashed 4 sprigs rosemary 4 sprigs thyme 1 cup balsamic vinegar 6 cups chicken broth

[Chicken] ---- Chicken Piccata:: 2 chicken breasts butterflied and pounded thin, 1 Tbs olive oil, 1 Tbs butter, 1 chopped clove garlic, 1/4 c dry white wine, 1/2 c chicken broth, 1 lemon juice, 1 tsp honey, 2 Tbs capers, 1 Tbs butter, salt & pepper, 1 Tbs chopped parsley. ---- 2 Servings
