You can use either canned or fresh tomatoes, depending on the season, but make sure everything else is fresh—especially the garlic, peppers, lime juice and cilantro--or it won’t taste bright and lively.

Taco Pizza Recipe...This is AMAZING! Used fresh salsa from the deli. Left the beans off, doubled the meat, and added broken tortilla chips to it for a little crunch. Definitely a keeper!

black bean patties w/ corn relish & avocado cream sauce...verdict: unlike other commenters on this recipe, I found the patties flavorful (though I used seasoned breadcrumbs and cornmeal and omitted the chipotle). The sauce and relish were a tad disappointing, but I still love the idea. I don't think I would cook the corn next time...and I might omit or cut down on the tomato.
