Basic Crepes : In lg bowl whisk 1c flour, 2eggs. Gradually whisk in 1/2c 2%milk, 1/2c water til smooth (or can just use 1c+2Tbsp milk). Whisk in 1/4tsp salt, 2Tbsp butter -melted, (and 1.5Tbsp sugar for sweet crepes). Beat til smooth. Heat on Med. lightly buttered nonstick pan. QUICKLY swirl (tilting pan) 1/4c batter across bottom of pan (and a bit of the sides if necessary) to make thin crepe; cook for 1-2min on first side til very golden; turn; cook about 1min more.
