My husband isn't a fan of the "just add water" boxed mixes, so we make our own whole wheat pancake mix. It cuts down on breakfast prep time to have a mix, but we also get the benefits of homemade and healthy!

Breakfast Potatoes... I make these all the time! They're even better with sliced smokies added in.
