Fit for Success: Healthy Snack: Quinoa Pizza Bites. These may be called "snack", but we had these for dinner & they were a HUGE hit. I doubled the batch, left half plain and added finely diced pizza toppings to the other half. So delicious!!! Egg replacer works just fine in these.
Bang Bang Shrimp --Just made this for dinner tonight and yum..it was so good. A little more work to prepare them, but they are delicious. I would suggest making this on a day when you aren't working or have anything planned. Made it today & was a perfect Sunday meal b/c it took a good 2 hours to prepare and cook.
