    Fluffy Pancakes I tweaked my favorite Pancake recipe to be more nutritious & egg and dairy free. Turned out really good! Kids even wanted seconds :) Ingredients 3/4 cup Plant based milk (I used Lt vanilla soy) 2 tablespoons white vinegar 1/2 cup all-purpose flour 1/2 cup whole wheat flour 1/8 cup oat bran 1 tablespoons honey or agave 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1T flax meal mixed with 3T water 1 T canola oil 1 T apple sauce cooking spray Directions Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". Combine flours, oat bran baking powder, baking soda, and salt in a large mixing bowl. Whisk flax mixture, oil and agave into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

    Best Pancakes.. had them for breakfast this morning and added cinnamon swirl Cinnamon swirl: 2 tablespoons melted butter (Instead of butter we used a little milk to thin it out) 1/4 cup brown sugar 1 teaspoon cinnamon 1 tablespoon flour 1. Mix all the ingredients together, put in plastic baggie, cut the tip off... 2. Pour pancake batter into pan... add the cinnamon swirl immediately, just to one side. YUMMY
