chicken cordon bleu. I tried this tonight. Yum! I did it poor man style though with cheap lunch meat ham and Panko bread crumbs and made mini ones so I got twelve small ones instead of six large. Froze a bunch so I can just pop in the oven for dinner when I am lazy.
Rotel crock pot chicken - put frozen chicken in and 5 1/2 hours on high later, the chicken was cooked but the dish was very watery, so I just shred the chicken and uncovered the top. This worked perfectly and the dish was a big hit - a little too spicy for me but James loved it. Maybe add some corn at the end next time? Needed more veggies..
