Spinach, mushroom & feta crustless quiche. I may try this sometime, but substitute the mushrooms for a different veggie. Sounds yummy!
Egg Spinach Quiche Cups:10 ozs. frozen chopped spinach, 3/4 cup egg whts, 3/4 cup shredded fat free cheese, 1/4 cup red bell pepper, chopped 1/4 cup onion, chopped fine hot sauce (optional) Microwave the spinach on high 2 1/2 mins. Drain completely. Line a 12 cup muffin tray w/foil baking cups. Spray the cups w/cooking spray. Combine the egg whts, cheese, mushrooms, spinach & onions in a bowl. Add hot pepper 2 taste. Divide evenly among the cups. Bake at 350, 25mins. Makes 12 muffins 75 cal ea.
