Cheesy Enchilada Casserole Ingredients 1 pound lean ground beef (90% lean) 1 large onion chopped 2 1/2 C salsa 1 can 15oz beans rinse and drain 1/4 C Italian salad dressing 2 tablespoons reduced-sodium taco seasoning 1/4 tsp ground cumin 6 flour tortillas 8in 3/4 C sour cream 2 C shredded Mexican cheese 1 C shred lettuce 1 med tomato chop 1/4 C mince fresh cilantro
Enchilada Casserole Review: Our new favorite taco recipe. SOOOO easy to make and SOOOO flavorful and delicious. I used a can of Rotel rather than salsa and I added a can of enchilada sauce to each layer. Leftovers are just as good! Made this a few times and my husband is in LOVE with this recipe! A MUST try!
