Low Carb Cream Cheese Muffins: 8oz light cream cheese, 2 eggs, 1/4c sugar or Splenda, 1t vanilla extract, 3T vanilla whey protein, 1/2T cinnamon, 1/4t pumpkin spice, 1/4t nutmeg. Beat all ingredients w/electric mixer until you have the consistency of a pancake batter. Pour 1/4c batter into each cup of greased muffin tin. Bake 15min @350F. Leave in oven to cool 20min.
