Authentic Greek cooking is all about using the best ingredients and this is as true with their regional salads as it is with their simply grilled fish or meat. In that spirit, when shopping for this dish look for the ripest tomatoes (they don’t have to be cherry), fresh Feta cheese and, if you can find it, a green-hued fruity olive oil from Greece is also a boon to the overall flavor.
Greek Couscous Salad. Just made this today but tweaked it a bit. Used quinoa instead of couscous, toasted walnuts instead of pine nuts. Added a bit more lemon, a bit less oil. I can just feel the healthy coating my arteries. Best salad EVER!!
Greek Salad by The Pioneer Woman- romaine lettuce with big chunks of tomato +cucumber and crumbled feta, with simple oil/vinegar/sugar dressing. Think could make ahead + leave in fridge quite happily til lunch. Serve with crusty bread, or wheat tortilla?
