Salted Caramel Cheesecakes - soooo good! I used a whole Nilla wafer for the crust (no crushing, mixing & baking) and baked them in muffin tin, then unwrapped them after they cooled and refrigerated them. Two steps that made this recipe even more easy! Everyone said they looked like I had made mini-cheesecakes. Careful on the salt topping - too much and it can ruin the flavor.
