Chicken stuffed with sautéed spinach and artichokes. Served with a side of roasted brussel sprouts. Just used olive oil and garlic in the sautée mix. Sprinkled chicken with sea salt and pepper. I also mixed a couple table spoons of plain Greek yogurt to make yo a little creamy. You can skip the yogurt...depending on if you use dairy. I try to stay away from dairy, but this was a little treat.
