First I enjoyed a bowl of this at Bam Bu a local Vietnamese restaurant. Then I used this recipe & made a pot at home......as close as it could possibly be except I had to omit the "coagulated pork blood" due to the last of stock at my local mega mart. haha

Vegan Pho with Coconut Ginger Broth and Pan-Seared Tofu!!! Oh my! I know, you can just taste a broth with hints of coconut and ginger; YuM! I love lemongrass in any broth and spiced with cinnamon and star anise the broth is a winer. I would enjoy the tofu pan-seared in coconut spread. WoWserS! Don't forget the cilantro, mint and basil.
