Pho - Oh how I love Pho! I know it's time consuming and probably easier to go to your fave Pho shop, but I really want to try to make it one day on my own. Hope it won't disappoint.

Vegan Pho with Coconut Ginger Broth and Pan-Seared Tofu!!! Oh my! I know, you can just taste a broth with hints of coconut and ginger; YuM! I love lemongrass in any broth and spiced with cinnamon and star anise the broth is a winer. I would enjoy the tofu pan-seared in coconut spread. WoWserS! Don't forget the cilantro, mint and basil.
