Cook a pierced potato in the microwave until it’s soft all the way through – about 6-7 minutes total, flipping over every 1-2 minutes. Cut the potato in half, then cut each half into squares. Don’t cut all the way through, just down to the skin. Season with butter, parmesan cheese and Lowry’s seasoning salt, then pop them into the middle rack of your oven set to broil for 10-15 minutes
Chili-Spiked Sweet Potato Fries
Cheese and Onion Potatoes- These were good. I was worried about the butter burning, so I used 3Tbsp. butter and 1 Tbsp. olive oil to keep it from burning. And, they needed some salt (and I'm not one for a lot of salt, so that's saying something), and the onions got too brown. So, next time I make these I will salt lightly when I add the pepper, and I will start the potatoes for a couple of minutes before adding the onions.
