The Vegan Stoner's Peanut Stew: chop and cook half an onion. Add a can of stewed tomatoes, half cup of crunch peanut butter, half can of chickpeas. Chop a (sweet) potato and add to pot with some thyme. Cover and cook on low for 20m. Serve on rice.
Pioneer Woman Potato Soup. Another pinner says: made this earlier in the week and it was perfect for a cold day. I served it with cornbread on the side and it was delish. I omitted the parsley and it was fine. Highly recommend this recipe! I will make this potato soup from now on instead of my old boring recipe. Don't skimp on the cajun seasoning! The heat is delicious.
