Whole Wheat Blueberry Muffins - I always check a blueberry muffin recipe for the flour-to-blueberry ratio, and I don't attempt anything less than 1:1. But this one actually calls for MORE blueberries than flour... :)
I really like how they turned out, despite the bumpy ride I had. I was missing a few ingredients, so I had to make a few substitutions, such as •1/2 cup sour cream instead of 1 cup yogurt •1 tbs vinegar + 1tsp baking soda instead of 1 egg •soy milk instead of regular milk •20 minutes in oven instead of 17 It was still good though. Probably the best blueberry muffin recipe I've had so far.
