Peach Jam (fridge style) Summer in a jar! Perfect way to enjoy bruised or over-ripe peaches. No pectin added. Easy & delicious!

Easy Peach Jam 9 cups peaches 6 cups cane sugar 4 tbsp freshly squeezed lemon juice 1 box of pectin Prepare jars & lids by washing them and placing them in a 250 degree oven for 25 minutes to sterilize. Combine peeled peaches, pectin, & lemon juice in stainless steel pan. Stir till pectin is dissolved. Bring to a boil over med. heat. Stirring often, & once the color changes to clear, skim off foam & add sugar, bring to a raging boil for a minute or so.

Peach Preserves. My Dad loved the pear preserves his Mama made, also blackberry. They grew it all on the farm!
