Cuban tamales are a great taste treat. In a Cuban tamal the meat is mixed in with the dough and not used as a filling as in Mexican tamales. In Cuba we use a type of field corn, it's not as sweet and it's more mealy than the sweet corn we eat in the U. S. You need fresh field corn, NOT the dried stuff.
