    I always use spinach too. And I just add it into the bottom of each bowl, not the soup. That way it isn't soggy.

    I make a lighter version of this and it still tastes awesome and rich. The Zuppa at OG doesn't have bacon, so I use spicy turkey italian sausage and light/fat free half n half with the kale instead of spinach. You really can't tell the difference and it makes it a lot leaner.

Homemade Olive Garden Zuppa Toscana Soup: Crockpot recipe. I really liked the flavor. I would recommend cutting potatoes and Kale smaller. Also, potatoes take very long to cook. I would recommend using crockpot for 6+ hours or cooking potatoes part way first.

    Put the potatoes on the very bottom and they will cook much better for you. :)

HEALTHIER crock pot Olive Garden Zuppa Toscana-sub turkey sausage, added red bell pepper and 2 carrots, 1/2 c evaporated milk or reduced fat milk, 1-1/2 cartons chicken broth, 1/2 pkg kale, slice potatoes in different thickeness to avoid melting, 4 hrs on low & 1 hr on high to thicken (kt)
