These were good, but a bit bland. I added onion to the meat when I cooked it, then sprinkled tomato and lettuce on top after baking. I would also probably add olives, sour cream and maybe some green onion on top. Cooking the meat in the enchilada sauce was a great call, but I'll add some spices to the meat next time.
