Egg Substitutes. MBF: I've successfully replaced with arrowroot powder and cornstarch. A mashed banana as a replacement makes the muffins much more moist and they fall apart more.

I haven't been vegetarian in years much less vegan but this is great info when a trip to the grocery store is 30 minutes round trip not including shopping.
