It’s a fast, easy, and delicious way to get a big dose of vitamins and minerals, plus it tastes FANTASTIC!! Don’t let the color’s fool you!! It is sweet and filling – even the kids love it!! They love to name it the “Monster Smoothie” or “Shreck Smoothie” or some other fun name but believe me, kids go crazy for it!! And it’s a great way to sneak in some powerful green nutrition into their diet. It’s super fast to make and a great breakfast or snack option, especially for people on the go and those looking to lose weight. It takes about 1 min to make, literally!! This recipe is super simple. All you need is a blender and the following ingredients: 1-2 bananas 1/2 cup frozen peaches 1/2 cup frozen mango a couple handfuls of spinach water ice (if desired) Add enough water to blend and enjoy, that’s it! Forget the dehydrating morning latte and get the glow with a Green Smoothie instead. I’ve have clients who have literally changed their lives just by adding Green Smoothies into their routine. Great for weight loss, digestive health, supporting the immune system, and as a healthy and filling snack. If you can not do bananas for any reason simply leave it out or substitute any other fruit you like. If you want a creamier consistency, you can substitute avocado or coconut meat/flakes instead of the banana. If you want the smoothie to be BRIGHT green as pictured, use only lighter colored fruits like pineapple, green grapes, kiwi, green apples, yellow raspberries, pear, orange, etc. If you add darker fruits like strawberries, cherries, etc your smoothie will turn out to be more of a brown color – still DELICIOUS, just not as vibrantly green as in the pictures above. Can I add yogurt or milk to my green smoothie? I am a firm believer in proper food combining. Dairy does not combine well with fruit and will cause fermentation, yeast, digestive issues, and will not aid in weight loss. That’s the reason I don’t recommend adding yogurt or any other dairy products. Believe me, you will be satisfied with the smoothies, the recipe will make about a quart which will definitely fill you up!! If you have blood sugar issues, use avocado and/or coconut meat/flakes and semi-sweet fruits like grapefruit, berries, green apples, and add stevia to taste. I don’t EVER worry about calories! When you’re eating whole foods, especially raw unprocessed fruits and vegetables, you don’t have to!! That’s what is SO LIBERATING about it!! Thai Chicken Salad with Spicy Peanut Sauce Thai Chicken Salad (recipe adapted from Taste and Tell) serves 8 Chicken marinade 1/2 C vegetable oil 2 Tb rice vinegar 1/4 C sugar or 2 Tb Truvia 1 clove garlic, minced 1/2 bunch cilantro, chopped 1 lime, juiced dash of salt and pepper 4 boneless, skinless chicken breasts – about 2 1/2 pounds total Salad 2 hearts of romaine, chopped 1/2 large head of napa cabbage, chopped 1 cucumber, peeled, seeded and chopped 2 carrots, shredded 1 red bell pepper, chopped 5 green onions, chopped 1/2 bunch of cilantro, chopped 1 C salted peanuts Dressing 1/4 C rice vinegar 1/4 C Thai sweet red chili sauce 1 tsp sesame oil 1/2 tsp sugar or Truvia pinch of salt and pepper Peanut Sauce 1/4 C natural peanut butter 2 Tb soy sauce 1 Tb rice vinegar 1 Tb Thai sweet red chili sauce 2 Tb water 1. In a ziplock bag, combine all the ingredients for the chicken marinade. Mush it all around, then place it in the fridge for at least 4 hours to marinade. Cook the chicken either on a hot grill, 6-8 minutes a side or in a 350 degree oven for 40 minutes. Allow it to cool a bit, then chop up all the chicken into bite sized pieces. 2. Combine all the salad ingredients in a large bowl, except for the peanuts, then add the chicken. Combine all the dressing ingredients then pour over the salad. Toss until the salad is evenly coated with the dressing. Dish out the individual servings of the salad. 3. Stir together the ingredients for the peanut sauce in a small bowl. If the sauce is too thick to drizzle, add a bit more water. Generously drizzle the peanut sauce over each serving of salad then top with the peanuts.
