This is a vegetarian version of spring rolls. You can replace the mushrooms with minced meat if you like a regular version. If you like shrimp, just add them in place of the carrots. This recipe is posted by request, and comes from Linda Doeser.
30 Minute Clean Thai Turkey Zucchini Meatballs - go easy on the coconut sauce and you have a beautiful healthy dish. Possibly substitute turkey for chicken. I also subsituted fishsauce with ketjap manis, just because I didn't have any fishsauce around.
