This taco pasta salad is delicious, but makes a ton, so not the best thing to make for one person. On the bright side, it gets better after the flavors blend for a day and I have lunch for a week. Oh and add some crunched up taco-flavored Doritos on top.
Cook ground beef with taco seasoning. Add 4 oz cream cheese. Blend well. Set aside and allow to fully cool. Cook the pasta shells. Pour salsa in the bottom of a 9x13 baking dish. Stuff each shell with the meat mixture. Bake at 350 degrees for 30 minutes. Sprinkle crushed chips and shredded cheese on top. Cook for about 15 more minutes.
