Goat vinegar cheese (like Chèvre) heat 1-3 quarts of goat milk and slowly bring to 181 degrees F. Add 1/4 cup vinegar or lemon juice (acid). Take off heat and let stand 1 hour. Strain through 4-ply of cheesecloth. Squeeze out excess. Let hang on wooden spoon over container overnight. Pack airtight for a more chèvre type of cheese. Repeat this process with the leftover whey to get ricotta!
