Mediterranean Chickpea Salad Ali: really good healthy lunch! Stayed good in the fridge for quite a few days too. I skipped the black olives, only used two cans of chickpeas, and FAR less olive oil than it calls for (at least half).
Tomato Cucumber Salad ~ I could literally eat this every day for the rest of my life. Verdict: SO GOOD! Better the second day, but still really good day one too. A great side dish to a BBQ. Easy to throw together!
