Thai Coconut Curry Soup - as my friend promised, this was very good! And, best of all, very easy to make. It was missing a "sweet" quality that I can't put my finger on, but something that differentiates it from the Thai food place I frequent. Who knows, maybe they simply add sugar to their recipe. I used TJ's light canned coconut milk, so that kept the calories and fat content low in this.

Thai Coconut Curry Soup - Chef Michael Smith Ingredients 2 cans (14-ounce/400 mL each)of premium coconut milk 1 heaping tablespoon (20 mL) of Thai curry paste the tender stems of 1 bunch of cilantro, rinsed well 2 chicken breasts, thinly sliced 2 cups (500 mL0 of chicken broth 1 carrot, shredded 4 or 5 lime leaves 2 stalks of lemon grass, halved lengthwise, woody leaves removed 2 tablespoons (30 mL) of fish sauce the zest and juice of 2 limes a small knob frozen ginger a handful bean sprouts a 8 ounce (225 g) package rice noodles 1 bunch of cilantro leaves, rinsed well 2 or 3 green onions, thinly sliced a sprinkle or two salt or soy sauce Procedure Scoop the thick coconut cream from the top of just one of the cans into a large stockpot set over a medium-high heat. Melt the cream, add the curry paste and stir for a few minutes until they begin to sizzle. Add the cilantro roots and chicken and sauté until the chicken is cooked through, about 5 minutes. Add the coconut juice from the first can and all the contents of the second can along with the chicken broth, carrot, lime leaves, lemon grass, fish sauce and lime zest and juice. Grate the frozen ginger into the broth with a Microplane grater or standard box grater. Simmer for 20 minutes or so. Stir in the bean sprouts. Add the rice noodles, gently pushing them beneath the surface of the broth. Turn off the heat and let stand until the noodles soften, about 5 minutes. Rice noodles don’t need to simmer like pasta to cook; they simply need to rehydrate in the hot liquid. Stir in most of the cilantro leaves. Remove the lemon grass stalks. Taste and season with a touch more salt (or soy sauce) as needed. Ladle into large bowls and garnish with the green onions and remaining cilantro leaves.

Vegan Quinoa Sweet Potato Chili -- similar to the other quinoa chili. Both also desperately needed lime at the end when eating on the first day. Best on the 3rd. day.
Vegan quinoa & sweet potato chilli. Pinned and tried! I made this as a late night healthy 'snack' and loved it. I didn't have black beans so I used one tin of kidney beans and one tin of black eyed beans. I also added a green bell pepper for some more texture. I had to cook for the whole 30 mins to get the mix to thicken up, the end result was delicious, especially topped with a little Parmesan (though obviously this turns the dish into non vegan). The chilli powder I used was hot therefore the dish really packed a punch.

Tangled Thai Salad with Peanut Lime Dressing - Made with Pad Thai noodles = Gluten Free
1 cup chopped napa cabbage 1/3 cup sliced jicama (cut into small sticks) 2/3 cup shredded or spiralized carrot 2/3 cup shredded or spiralized yellow beet 4 tbsp Peanut Lime Dressing (recipe follows) 3 slices cucumber, halved 2 tsp chopped raw peanuts 2 tbsp Fresh Salad Topper (recipe follows) 1 lime wedge 2 to 3 tbsp chopped cilantro 1. Put napa cabbage in a large, shallow serving bowl (or plate). Top with jicama. 2. Pile the carrot and beet on top and drizzle with dressing. 3. Garnish with the cucumber, peanuts, Salad Topper, lime, and cilantro. Peanut Lime Dressing This dressing will keep for up to a week in the fridge. It is delicious on the Tangled Thai Salad, but would be equally good on any salad or even poured on top of cold noodles. Makes 1 cup 3 cloves garlic, minced (about 1 tbsp) 2 tbsp tightly packed cilantro 2 tbsp natural peanut butter 2 tbsp + 2 tsp lime juice 1 tbsp + 1/2 tsp tamari 1 tbsp rice vinegar 1 tbsp peeled and chopped ginger 2 tsp coconut milk 1 1/2 tsp organic sugar 3/4 tsp sesame oil 3/4 tsp sambal oelek 1/2 cup sunflower oil 1. In a blender, puree all ingredients except the sunflower oil. 2. With blender running, add sunflower oil in a thin stream until dressing is emulsified.

I wanted to kick it off with my go-to soup recipe. My family has been making it for years and it instantly makes me feel like I’m living back in Mexico City. Hope all of you enjoy it as much as I do! Bon appétit! Mexican Vegetable Soup with Lime and Avocado Serves four to six. Ingredients 1 tablespoon light olive oil 1 medium red onion, finely diced 2 cloves of garlic, finely chopped 1/2 teaspoon dried oregano 1/2 teaspoon salt 2 carrots, cut into 1/4-inch-rounds 8 ounces green beans, tipped and cut into 1 inch pieces 2 medium tomatoes, peeled, seeded, and chopped 6 cups of chicken stock 1/4 cup cooked hominy 2 teaspoons chilpotle chilies, minced 1 avocado, peeled and sliced cilantro leaves, for garnish 6 wedges lime Directions - Warm the oil in a soup pot, add onion, garlic, oregano, and salt, and cook over medium-low heat until the onion softens. - Add the carrots, beans, and tomatoes; pour in the heated stock and simmer. - After 20 minutes add the hominy and then gradually stir in the chilpotle chilies to taste. - Cook another 5 minutes; then taste for salt. - Ladle the soup into bowls; garnish with the avocado and cilantro leaves.
