Sweet Corn & Black Bean Salad--7/7/13. Hubs whipped this up last night, with slight modifications. We used fresh corn on the cob and Roma tomatoes. We skipped the olive oil and splashed it with red wine vinegar instead. Oh my heavens, was it good! Cilantro and lime is a divine combo.
This colorful, high fiber, high protein salad makes a great side dish, appetizer served with chips, or lunch served with fresh tortillas. This salad is low in saturated fat and loaded with antioxidants.
Greek Summer Salad: 2 Cucumbers (peeled/chopped), 2 pints Grape Tomatoes (sliced in half), 1 Red Pepper (chopped), 1 Green Pepper (chopped), 1/2 c. Green Onions (sliced), 1/2 c. Pitted Kalamata Olives (sliced), 1 1/2 - 2 c. Crumbled Feta Cheese, 3 T. Red Wine Vinegar, 1 T. Lemon Juice, 3 T. Olive Oil, Salt and Pepper. Combine all ingredients in a large bowl. Serve immediately, store in fridge.
