Vegan Pineapple Fried Quinoa - Yes!! I didn't have a lot of the ingredients, but I had quinoa and pineapple, so I was determined! I used 2 cups dry quinoa and 1 and 1/2 cups of both water and vegetable broth. Cutting pineapple really isn't my area of expertise, so I had a family member do it for me. I did everything in one saute and omitted the dressing, kale, nutritional yeast and tofu. Instead of shiitakes, I used pepper. I liked the result! The flavors complimented each other nicely!
