The Caribbean Queen from "8 Easy 3-Ingredient Smoothies" How to: Place 8 pieces frozen mango (about ¾ cup) and ½ cup So Delicious coconut milk into a blender. Blend until smooth. Then add 1 tablespoon chia seeds and pulse just a few times to combine. Serves 1. Extras: You can add ground nutmeg, protein powder, or 2 tablespoons shredded, unsweetened coconut.
Coconut Mango Chia Pudding Author: The Peach Kitchen Ingredients 4 tbsp chia seeds 2 cup coconut milk or almond milk 2 tbsp honey 6 tbsp diced ripe mango Directions Stir together all the ingredients in a bowl except mango and mix well. Chill for about 6 hours or overnight. Top with diced mango when ready to serve.

♥ Caprese: Take a whole tomato and cut slices into it (about 1/4″ thick) without cutting all the way thru the other side. Insert a slice of fresh mozzarella cheese and a basil leaf in between each slice. Once the tomato is stuffed (it should “fan” out a bit) drizzle olive oil and balsamic vinegar over the top. Drizzle it with your favorite sea salt – and voila! An update to everyone’s favorite caprese salad!
Chia Fresca- •2 cups water or coconut water •1.5 tbsp chia seeds •1/2 tbsp fresh lemon or lime juice, or to taste •Sweetener, to taste 1. Add chia and water stir. Let sit for 10 minutes to allow the chia seeds to swell up. I like to use a jar with a lid so I can shake it up really well and break up the clumps of chia. 2. Add lime or lemon juice and sweetener to taste. Stir or shake.
