Baked Ziti with Summer Vegetables. . .okay, I made this tonight and I LOVED it. But at some point I probably should come to terms with the fact that hubby and kids don't like zucchini and squash :( Just look at this cheesy yumminess though! And I think at 300ish calories per serving its healthy as well!
Baked Ziti! 12 ounces rigatoni pasta 3 tablespoons extra virgin olive oil 3 spicy Italian sausages, casings removed 1/2 yellow onion, diced 1 green bell pepper, seeded and diced 2 garlic cloves, minced 2 1/2 cups homemade or store bought marinara 1 cup part-skim mozzarella cheese 1/2 parmesan, grated salt and pepper to taste Make this all the time ... So yummy!
