    Baked ziti and summer veggies - yum this looks good! Update: this is a great summer dish, but in my opinion needed some more flavor. I added ground turkey, but next time I'd add red peppers and maybe a prosciutto or pancetta for more flavor

Summer Veggie Ziti-I made this on 2/21 and it was very tasty. It needs about 2x the seasonings but other than that, it's fabulous!

Baked Ziti with Summer Vegetables. . .okay, I made this tonight and I LOVED it. But at some point I probably should come to terms with the fact that hubby and kids don't like zucchini and squash :( Just look at this cheesy yumminess though! And I think at 300ish calories per serving its healthy as well!
