This dish is almost too simple, but my husband loves it. I can make it any night and hes happy. I have tried to dress it up before and he politely has told me that he likes it plain and simple. This is nothing to write home about, but it seems to work in my household. Its fast, inexpensive, easy to make and doesnt require a lot of ingredients. I serve it with plenty of salted white rice and veggies.

For St. Patricks Day: Crockpot Corned Beef and Cabbage 4 lb. corned beef brisket 1/2 tsp. pepper 3 TBSP. vinegar 1 head of cabbage, cut into wedges 3 TBSP. sugar 6-8 red potatoes cut into wedges (or quarters if you prefer) 10 baby carrots Combine all ingredients in a slow cooker. Veggies on the bottom and lay the cornbeef on top. Cook on High for 1 hour, then on low 6 or 7 hours. *note - put in the cabbage in during the last 30 minutes of cooking, placing it on the top.
