Chocolate-Zucchini Muffins (vegan). Made 3/5, both the original with half the sugar and a GF version (subbed Bob's all-purpose GF mix plus 1/2 tsp xanthan gum) with full amount. Both versions good, but could be a bit sweeter. The kidlet didn't seem to notice that they were healthy. ;)
Impossible Vegan Pumpkin Pie ~*~ made 10/11/12 ~*~ came out pretty good. Used half the sugar and replaced half with stevia. Pretty much tastes like pumpkin pie without the crust. Well worth not having all the fat.
